Coleslaw is derived from the Dutch words for ‘cabbage’ and ‘salad’ so this is a fennel salad plain and simple. Vegetables taste very different depending how they are cut. Whole carrots don’t compare to grated, sliced, diced, batonned or julienned. Fennel is delicious raw if it’s finely sliced, even this one that had grown really slowly through the winter and was starting to go to seed. I sprinkled on a few calendula petals to add some colour and zing.
Mix together and allow to stand for about an hour before serving. Tasted even better the next day!
