If you’ve got lemons make lemonade. Easy, quick, delicious. I make a syrup to keep in the fridge and make it up with still or sparkling water for flat or fizzy lemonade. Dilute to taste – about five to one ratio of water to syrup works for me. Makes about a generous pint / half a litrre of syrup.
Remove the zest from 8-10 lemons. Squeeze the juice into a measuring jug. Measure the volume in millilitres, pour into a large saucepan and add an equal weight in white sugar in grams. I got 200ml juice so added 200g sugar. Add double the quantity of juice in water (in my case 400ml water). Add one teaspoon citric acid per 200ml lemon juice. Add the lemon zest to the pan and simmer gently for about half an hour, stirring from time to time. Allow to cool and strain through a fine mesh (I used a teastrainer) into a sterilised jar.
